Veg Manchurian Gravy

Veg Manchurian is the result of the adaptation of Chinese cooking and seasoning techniques to suit Indian tastes and has become a staple of Indian Chinese cuisine. It is believed to have been originally developed by a small Chinese community that lived in Kolkata.

INGREDIENTS :

For Manchurian:

Cabbage 1/2 cup (grated)

Cauliflower 1/4 cup (grated)

French beans 1/4 cup chopped into small pieces)

Carrot 1/4 cup (grated)

Green chillies 2 (chopped small)

Ginger-garlic paste 2 tsp

All-purpose flour 2 tbsp

Corn flour 3 tbsp

Salt to taste

Pepper powder to taste

Oil for deep frying


For gravy :

Oil 1 tbsp

Garlic (finely chopped) 4-5 cloves

Ginger (finely chopped) 1 inch

Onion (cubed) 1 medium 

Bell pepper (cubed, any color of ur choice) 1 medium 

Vinegar 1 tsp

Soy sauce 1 tsp

Shezwan chutney 1 tbsp

Sweet red chilly sauce 1 tbsp

Tomato ketchup 1 tbsp

Corn flour 1 tbsp

Water as required 

Salt to taste

Pepper powder to taste

Spring onion (chopped) 2 tbsp for garnish 


PREPARATION :

Heat oil in a deep pan for frying.


In a mixing bowl, add all the grated vegetables, ginger-garlic paste, salt, pepper then add the flour and mix it into the dough


Now prepare a small ball sized balls and deep fry them in the oil, make sure the flame is on low to medium while you are frying. 


Remove them once it is golden brown in color.


Keep the fried Manchurian balls aside.


In a non-stick pan heat 1 tbsp of oil, then add the garlic fry it for 30 seconds and add the ginger, fry it for 30 seconds and add in the cubed onions fry for 1 minute (you fry all these veggies at high flame, as you dont need to overcook)


Now add in the bell peppers fry it for a minute then add soy sauce, sweet red chili sauce, shezwan chutney, tomato ketchup, and vinegar give it a good stir.


Add in the salt and pepper to taste (be careful as the sauces contain salt and the Manchurian also contain salt).


In a small bowl take 2 tbsp of cornflour with 1/4 cup of water mix it well and add to the vegetables,  add in 1/2 cup of water to it and check the consistency of the gravy as per your taste or preference. 



Once the gravy starts to boil add the Manchurian balls to the gravy mix it and garnish it with spring onions. (after adding the Manchurian balls you need not cook any further just a mix is enough)


Your Veg. Manchurian gravy is ready to eat which you can enjoy with vegetable fried rice.
