Rabdi Cake

Rabri is a sweet, condensed-milk-based dish, originating from the Indian subcontinent, made by boiling milk on low heat for a long time until it becomes dense and changes its color to off-white or pale yellow.


Prep time : 10 minutes Cooking time : 60 minutes


INGREDIENTS :

For Rabdi 

Milk 3 cups

Milk powder 1/4 cup

Condensed milk 1/4 cup

Fresh cream 2 tbsp

Cardamom powder 1/4 tsp

Saffron 1/4 tsp 


For Cake 

All Purpose flour  1 cup

Baking powder  1 tsp

Baking soda 1/2 tsp

Powdered sugar 1/2 cup

Curd 1/2 cup

Oil 1/2 cup

Rabdi 1/2 cup

Almonds & Pistachios (sliced) 2 tbsp


PREPARATION:


For rabdi take milk in a sauce pan add milk powder, condensed milk, cardamom powder and saffron boil everything together well. (Note this is a faster way of preparing the rabdi).


On a low flame boil the milk till the quantity is reduced to approximately 2 cups. In this process stir occasionally. This process should take somewhere around 20 -25 minutes. Once done allow it to cool.


Preheat the oven @180°c for 10 minutes.


For the cake batter, take the flour, baking powder, baking soda and powdered sugar give it a good mix in a mixing bowl.


To the cake batter add oil, curd and rabdi to the dry ingredients and make it a smooth batter.


Pour it in 7 inch greased baking try and bake it for 35 minutes @180°c.


After 35 minutes or a little less depending upon your oven . To check if the cake is well done prick a toothpick , if it comes out dry, your cake is done.


Now with the help of a fork prick the whole cake and then pour the ready rabdi over the cake. The rabdi will be soaked by the cake make it soft and moist.


Garnish it with some sliced nuts and saffron.


Enjoy it while its warm or you can chill it 😊.
