Gajar Halwa (Indian Carrot Pudding)

Prep time: 5 minutes  Cooking time: 25 minutes Total time: 30 minutes INGREDIENTS: Carrot (grated) 500 gms Paneer (grated) 50 gms [Optional] Ghee 4 tbsp Sugar 100 gms ( u can increase as per your taste) Milk 1.5 cup Cardamom powder 1/4 tsp Almonds (sliced) 8-9 Cashew (sliced) 5-6 Pistachios (sliced) 7-8 PREPARATION : Heat a pan or kadhai with ghee fry the sliced almonds and cashews, remove and keep them aside. Add the grated carrots to the ghee fry the carrots for around 4-5 minutes. Add the milk, simmer the gas and let the carrots cook in the milk, this should take around 6-7 minutes keep on stirring in between,  the milk should get absorbed completely.  Now add the grated paneer fry it for a minute and then add the sugar, mix it well, stir everything well till the moisture of the sugar disappears and you see the ghee separating from the halwa. Add the fried almonds, cashews. Also add the cardamom powder and fry it for a minute or two.  Garnish it with sliced pistachios.  Enjoy it while its warm😊.

The word halwa is derived from the Arabic word ‘Hulw’, which means sweet. "Gajar ka halwa" was first introduced during the Mughal Period although it has association with an original dessert from Punjab (India), where it is also known as the gajrela.
