Cheesy Mashed Potatoes Pancakes

It's a 30 minutes breakfast recipe that everyone in the family will enjoy.

Prep time: 10 minutes Cook time: 20 minutes Total time: 30 minutes

 

INGREDIENTS :

Potatoes (boiled and mashed) 2 cups

Mozzarella cheese (grated) 1 cup

Butter (melted) 2 tbsp

Egg* 1 large (optional)

Warm Milk 2 tbsp

Spring onion (finely chopped) 4 tbsp

Salt to taste

Black pepper powder 1 tsp

Mixed herbs 1 tbsp

Breadcrumbs 1/2 cup + 1/2 cup

Parmesan cheese 1 tbsp

Paprika powder 1 tsp

Oil to shallow fry


PREPARATION :

In a large mixing bowl take the mashed potatoes, mozzarella cheese, melted butter, egg*, warm milk, 1/2 cup breadcrumbs, spring onion, salt, and black pepper powder, mix everything well and keep aside.


In a flat plate take the remaining 1/2 cup of breadcrumbs to add parmesan cheese,  paprika powder and salt give a mix and keep it aside.


Now with the help of an ice cream scoop start scooping up the mashed potato mixture and place them on a plate (using a scooper gives pancakes of the same size).


Once all the mixture is scooped out then pick each scooped mixture in ur hand and slightly press them to give a flat shape (do not make them thin), now roll them in breadcrumbs and keep them aside. 


Follow the same step till all the pancakes are coated with breadcrumbs mix.


Now heat up a frying pan and pour in some oil and start to shallow fry the pancakes till golden brown on both sides.


For a healthier version, you can bake the pancakes for 20 minutes @ 180°C, make sure u flip all the pancakes after 10 minutes, and bake it further.


Enjoy the yummy and cheesy pancakes with sour cream or dip of your choice😋
