Brownie (Low Carb & Gluten-Free)

This version of the brownie has the secret ingredient "CAULIFLOWER". This recipe is low carb and gluten-free. A perfect option for health-conscious people with a sweet tooth.

Prep time: 10 minutes Cook time: 55 - 60 minutes

Total time: 60 minutes Serves: 12 pieces

 

INGREDIENTS:

Cauliflower florets (steamed) 2 cups / (230 gms)

Seedless Dates 1 cup / (150 gms)

Milk/ Almond milk* 1 cup

(Almond Milk becomes a good alternative for vegan)

Peanut butter 3 tbsp

Vanilla extract 1 tsp

Oat flour 1/2 cup / (65 gms)

Cocoa powder 2 tbsp/ (15 gms)

Baking powder 1/2 tsp

Pinch of salt

Walnuts 40 gms (You can increase or decrease the quantity as per your taste)

Chocolate chips 1 tbsp (it is optional, I used it for garnish)


PREPARATION  : 

Preheat the oven to 180°C.


Add the first 5 ingredients (steamed cauliflower, dates, milk, peanut butter, and vanilla) to a blender or food processor and blend until completely smooth. 


Add the next 4 ingredients (oat flour, cocoa powder, baking powder, and salt) and blend until evenly incorporated. 


Stir in the chopped walnuts with the help of a spatula. 


Spread the batter in a greased pan of  7×7 inch, pat it twice and then sprinkle the chocolate chips and few walnuts on top.


Bake in the oven for about 50 minutes then check if required cook further until a toothpick comes out clean.


Let it cool for at least 30 minutes before trying to cut. 


Enjoy and store leftovers in an airtight container at room temp or in the fridge (don't store it for long as then it would become dry)
